Arabica coffee has many different varietals (or subspecies), each with its own characteristics. These characteristics include flavor, aroma, body, acidity, and caffeine content. They are dependent on the general area in which they're grown, local environment, and the way in which the beans are processed.
All our coffees are very high in quality, and what's best is often just a matter of opinion. For example, although a specific method of processing beans might be considered inferior to some people, it could produce characteristics that are desired by others. Although Jamaican Blue Mountain Coffee is grown in a region considered to have exceptional conditions for coffee, one might prefer the characteristics of a more reasonably priced coffee just as much.
